Chocolate Chip Zucchini Bread
I am a major fan of a sweet treat that makes me feel healthy because it has a vegetable in it. Healthier Carrot Cake Cupcakes or Fudgy Vegan Chickpea Brownies anyone? No, but seriously I absolutely love them!! This Chocolate Chip Zucchini Bread is a very classic recipe with a tiny bit of a healthy spin to it. It is fluffy, perfectly sweet & buttery, loaded with chocolate, and trust me you cannot taste the zucchini at all! It would be absolutely perfect with a cup of coffee for breakfast. I had it just like that the other day and it was magical!
What you need for this Chocolate Chip Zucchini Bread?
- Zucchini: This one is pretty obvious! You of course need zucchini for zucchini bread.
- Eggs: Eggs for binding and for moisture!
- Coconut Sugar: This is my absolute favorite sugar to bake with! It is also refined sugar free which I love. You can replace this with a different granulated sugar of your choice if you would like!
- Butter: You guys know I am all about healthy baking, but I am also all about a good balance! When I made this zucchini bread I felt like going for the real deal, so that is what i did. And let me tell you butter makes this bread crazy delicious!
- Whole Wheat Pastry Flour: I love this flour!! If I am not making a gluten free treat I almost always use whole wheat pastry flour. It makes a light & soft treat and adds a nice nutritional boost. I haven’t tested for this recipe, but I have found with other recipes that this flour can be swapped basically 1:1 with all purpose.
- Almond Milk: I always use unsweetened vanilla almond milk in my baking but you could place this with literally any milk you like!
- Chocolate Chips: Y’all know I live for chocolate so I of course had to put some in my zucchini bread!! I love to use dairy free semi sweet mini chocolate chips.
- Vanilla Extract, Cinnamon, and Salt for lots of flavor!
- Baking Powder for a little rise!
How to make this Chocolate Chip Zucchini Bread!
- Set the oven to 350 degrees.
- Shred your zucchini and squeeze out the excess liquid, you can do this easily with a paper towel.
- In a mixing bowl combine the eggs, coconut sugar, melted butter, almond milk, and vanilla extract until smooth.
- Stir in the shredded zucchini to the wet ingredients.
- In a separate bowl combine the whole wheat pastry flour, cinnamon, salt, and baking powder.
- Add the dry ingredients to the wet and combine.
- Stir in the chocolate chips.
- Pour the batter into a greased or lined loaf tin and top with more chocolate chips and salt.
- Bake for 40-45 minutes.
- Let cool, slice, and enjoy!

This Chocolate Chip Zucchini Bread is everything you need in a sweet bread! It is fluffy, perfectly sweet & buttery, loaded with chocolate, and trut me you cannot taste the zucchini at all. It will make your kitchen smell scrumptious and then be gone before you know it!

- 1 cup shredded zucchini (before you squueze out the liquid)
- 2 eggs
- 1 cup coconut sugar
- 1/2 cup butter melted
- 1/2 cup almond milk
- 2 cups whole wheat pastry flour

- 2 tsp baking powder
