Healthy High Fiber Dessert

I could shout from the rooftops, and sort of do daily on my social media accounts, about how life changing increasing my fiber intake has been. Like seriously life changing! I am feeling and looking better than ever.

I have gotten a few questions about what my daily fiber goal is and honestly I don’t have a specific number. I know that 30g a day is a great goal, but I don’t track anything at the moment so I have no real clue what number I am hitting.

All I know is that I try to focus on fiber at every meal and every snack throughout my day. Through doing that I am confident I am hitting my goal of eating “high fiber” most days. Or at least getting closer to it than I ever have before. Hence, why I created these sneaky fiber filled delights.

These 5 ingredient chocolate cups are made with chia seeds, berries, and peanut butter. All of which are pretty rich in fiber! Especially the berries and chia seeds. Thus each one of these little bites boasts 3g of fiber. Not too shabby for a delicious chocolate treat!

I absolutely love that every time I reach into my freezer for one of these I know that not only am I satisfying my sweet tooth, but I am doing it in a healthy nutritious way.

Ingredients

  • Peanut Butter – The natural kind! Look for a peanut butter that has only peanuts and salt as ingredients. I used the Trader Joe’s natural peanut butter for this recipe and it worked really well. This specific peanut butter is super runny, smooth, and creamy … which created a beautiful base layer.
  • Berries – You can use any kind of fresh or frozen berries that you like or have on hand. I used blackberries and raspberries.
  • Chia Seeds – Clearly I can’t get enough of this fiber powerhouse. Hence 3 of my most recent recipes revolving around the nutritious seed … my daily Chia Pudding Greek Yogurt Bowl, Peanut Butter & Jelly Oatmeal, and Peanut Butter Chia Pudding.
  • Honey – For a touch of sweetness in the jam layer! You could also use pure maple syrup.
  • Semi Sweet Chocolate Chips – Feel free to use dark chocolate or milk chocolate too. Semi sweet is just my personal favorite.

How To Make This Better-For-You Treat

This no-bake treat is quite easy to make! It’s all about layering and freezing.

  1. Divide the peanut butter into 16 mini muffin cups. I recommend using a silicone mini muffin pan for easy removal. This will be about 1.5 tsp of peanut butter per cup.
  2. Place the muffin pan in the freezer until the peanut butter is hardened.
  3. While the peanut butter layer is in the freezer, make the chia berry jam. Add the berries and water to a small pan or saucepan on the stove over medium heat. Simmer until all the berries have mostly broken down.  Smash any that remain more in tact.
  4. Turn the heat to low. Add the chia seeds and honey to the berries. Combine and let simmer for another 2-3 minutes.
  5. Remove the pan from the heat and let the jam cool for 5 minutes. Then add the jam to a container to cool further. The more you let the jam cool the easier the next step will be.
  6. Remove the muffin pan from the freezer. Add the berry chia jam on top of the hardened peanut butter layer. I recommend adding just enough to cover the peanut butter layer completely, while still leaving room for the final chocolate layer on top. You will most likely have a bit of jam leftover to use however you see fit.
  7. Place the muffin pan back into the freezer until the jam layer has hardened.
  8. Meanwhile, add the chocolate chips to a double boiler to melt.  Alternatively, you can melt the chocolate in 15-30 second intervals in the microwave. Stirring between each interval until melted.
  9. Remove the muffin pan from the freezer. Add the melted chocolate on top of the jam layer, dividing it evenly among the muffin cups.
  10. Place the peanut butter chia jam chocolate bites back into the freezer for one last time to freeze completely.
  11. Once frozen store in the freezer. Enjoy!

Expert Tips

  • Use a silicone mini muffin pan to make removing the peanut butter cups SO much easier.
  • Be patient and let each layer freeze thoroughly before adding the next.

  • 2 cups berries, I did raspberries & blackberries
  • 1/4 cup water
  • 2 tbsp chia seeds
  • 1 tbsp honey
  • 3/4 cup semi sweet chocolate chips
