Despite the fact that I am a food blogger who shares recipes for I living, I too sometimes can’t even fathom cooking a dinner that takes any longer than 30 minutes from start to finish or requires more than 5 ingredients.

Let’s just say I am starting to understand how and why adults always complained about figuring out dinner every night for the rest of their lives.

I recently turned 25, moved in with my boyfriend, and am mostly in charge of our nightly meals together. Which makes sense because it is sort of my job. Lol. But like I said, sometimes even I can’t gather the energy to follow or make a real recipe for dinner!

So I thought I would share some of the easy meals we’ve been loving recently here in a roundup post!

Trader Joe’s Pineapple Teriyaki Chicken Meatballs

These meatballs are Ryan and I’s absolute go-to for a quick and easy meal. Honestly, this meal is probably one of our favorite meals all in all! The fact that it is also one of the easiest to make in our repertoire is just the cherry on top.

How To Make

My favorite way to prepare these meatballs is in the air fryer. The package says 400F for 4 minutes, but we usually do a double batch. Since the basket is a little crowded I like to double the time to 8 minutes. This also gets them nice and golden brown!

Crispy Chicken Caesar Salad & Fries

I like to call this meal the air fryer special! The one and only kitchen appliance you will need is the air fryer. Now this is a seriously easy peasy meal. Perfect for a very busy night or just a very lazy night! It’s tasty, relatively healthy, and gets dinner on the table in under 30 minutes. My kinda meal!

Ingredients

  • Frozen Chicken Tenders / Strips – My personal favorite kind is the Perdue Crispy Chicken Strips, but really any frozen chicken tenders or nuggets will work. Or this is a perfect meal to add any prepped chicken or protein that you already have on hand into. I made my plate with leftover Baked Lemon Pepper Chicken that I had in the fridge.
  • Salad Kit – Any salad you like. We chose our favorite … Caesar! It’s sort of like a crispy chicken caesar salad.
  • Frozen Fries – We love to do sweet potato fries.

How To Make

The frozen chicken and fries will typically have air frying instructions on the packages, but I went a bit rogue. I set the air fryer to 400F for 20 minutes to start. I gave the fries a bit of time on their own and then added the chicken about halfway through. Then I simply air fried until the food was crisped to my liking! While the air fryer was air frying away I assembled the salad kit. Super simple!

This was a perfect easy at home meal that sort of tasted like fast food takeout!!! It was a very solid meal for us.

High Protein Cottage Cheese Egg Toast

This is a quick and easy meal that I’ve actually been enjoying for lunch, not dinner. So it doesn’t quite fit the criteria of an easy dinner meal! BUT I’ve been absolutely loving it and it felt right to include in this post. Plus who says you can’t eat hard boiled egg toast for dinner!

Ingredients

  • Whole Grain Bread – The only thing I really look for in my bread is that it has a good bit of fiber. I usually aim for 3-5g per slice.
  • Light Mayo
  • Cottage Cheese
  • Hard Boiled Eggs – I buy pre boiled and peeled eggs simply because I would not take the time to boil and peel my own. But I love hard boiled eggs! So you gotta do what you gotta do.
  • Garlic Salt – I have never really tried garlic salt until recently and boy was I missing out. SO YUM!

How To Make

There’s not much to know here! The process is very very simple. Toast your bread. Then layer on the mayo, cottage cheese, eggs, and garlic salt. A delicious nutritious meal that requires barely any time, cooking, or honestly thinking! Gotta love it.
