I love to serve with extra greek yogurt, fresh fruit, a spoonful of peanut butter, and add a bit of crunch too. Granola, chocolate chips, coconut flakes, etc.

I will be the first to admit that I may have been swept up in the high protein internet craze. Now I am seeing how important fiber is for a healthy diet! I have been trying to prioritize it in all of my meals, which believe it or not is actually harder to do than protein. Protein is pretty easy when you think about it! Like just eat some chicken. Fiber you have to be way more intentional about!

That is why I have been loving incorporating chia seed pudding into my day! When you enjoy a bowl of this for breakfast, lunch, or a snack you pretty much know that you have done a good job in the fiber department for the day.

Plus not to toot my own horn or anything, but I have had my fair share of chia seed puddings over the years and this easily tops the list. It’s rich, creamy, and truly delicious! I hope you guys enjoy xoxo

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1/2 cup greek yogurt
  • 2/3 cup milk of choice, or a bit more for a thinner consistency
  • 1/4 cup powdered peanut butter
  • 2 tbsp pure maple syrup
  • 2 tsp vanilla extract
  • Cinnamon, to taste
  • Salt, to taste

Instructions

  1. Add all of the ingredients to a mixing bowl. Combine thoroughly.
  2. Transfer the chia seed pudding mixture to an airtight container.
  3. Store in the refrigerator overnight or at least for a few hours.
  4. Serve and enjoy! I like to add more yogurt, fresh fruit, nut butter, granola, etc.
