  • 1 cup mashed banana, 3 bananas
  • ⅓ cup natural peanut butter
  • ¼ cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 egg
  • 2 cups old fashioned oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup dark chocolate chips

Instructions

  1. Set the oven to 350 degrees.
  2. Add the wet ingredients to a large mixing bowl – mashed banana, peanut butter, maple syrup, vanilla extract, and egg. Combine thoroughly.
  3. Add the dry ingredients to the bowl – oats, cinnamon, baking powder, and salt. Combine thoroughly.
  4. Stir in the dark chocolate chips.
  5. Transfer the mixture to a greased or parchment paper lined 8×8 baking dish.
  6. Bake for 25-30 minutes, until the top of the oatmeal bars is solid to the touch.
  7. Remove from the oven and let cool before cutting into squares. You can do 9 or 16 bars.
