Description
Salty, savory Fried Feta Eggs are a true breakfast game changer! In 5 minutes you’ll have the perfect egg with crispy, cheesy edges, fully set whites, and a rich, runny yolk. Serve on a warmed tortilla with avocado and fresh chives for a quick and flavorful meal!

- 1 egg
- 1/4 cup crumbled feta cheese
- 1 tortilla, taco sized
- Avocado
- Fresh chives
- Salt
- Pepper
- Cooking spray, or oil
Instructions
- First heat a non-stick pan over medium heat. Add cooking spray, or a bit of olive oil. Once the pan is hot, add the crumbled feta cheese. Arrange the feta cheese into a circle with a hole in the middle for the egg.
- Once the melted feta starts to bubble, crack an egg into the center. The egg should take about 5 minutes to cook – the whites fully set with a runny yolk. See my Expert Tips section above for tips on how to get the perfect crispy fried eggs.
- Meanwhile, heat the tortilla. Add cooking spray or oil to another pan over medium-high heat. Place the tortilla in the hot pan. Cook for 1-2 minutes on each side until golden brown. You could alternatively heat over an open flame on a gas stove or just in the microwave.
- To the warmed tortilla add a spread of avocado. Then place the crispy fried feta egg on top. Add salt, black pepper, and fresh chives.
- Serve and enjoy!
