Chopped Salad

  • 1 head iceberg lettuce, finely chopped
  • 6 oz oven roasted deli turkey, thinly sliced
  • 4 oz salami, thinly sliced
  • 1 15.5 oz can garbanzo beans
  • 1 English cucumber, finely chopped
  • 1 cup shredded mozzarella cheese

La Scala Dressing

  • 5 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tsp dijon mustard
  • 1/4 cup grated pecorino Romano cheese
  • Salt
  • Black pepper

Instructions

  1. First add all the chopped salad ingredients to a large bowl – iceberg lettuce, turkey, salami, garbanzo beans, cucumber, and mozzarella cheese.
  2. Then make the dressing.  Add the red wine vinegar, dijon mustard, and Romano cheese to a small bowl.  Whisk to combine.
  3. Pour in the olive oil as you continue to whisk.  Whisk until a well combined, creamy dressing forms.  Season with salt and black pepper to taste.
  4. Add the dressing to the chopped salad mixture. Combine thoroughly.
  5. Serve and enjoy!
