Description

Garlic Parmesan Smashed Potatoes are the ultimate side dish or appetizer recipe! Made with baby gold potatoes, fresh garlic cloves, olive oil, and parmesan cheese … these boiled, then baked potatoes have crispy edges, soft and fluffy middles, and are super easy-to-make. They’re flavorful, oven roasted to golden brown perfection, and are a fun way to switch up your next potato preparation!


Ingredients

  • 24 oz baby potatoes
  • 45 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/3 cup parmesan cheese, freshly shredded
  • Salt
  • Black pepper
  • Fresh parsley, chopped 

Instructions

  1. First fill a large pot with water. Heavily salt the water and bring to a boil.  Add the baby potatoes.  Boil for 20 minutes or until fork tender. 
  2. Drain and thoroughly dry the potatoes.
  3. Add the boiled potatoes to a large mixing bowl.  Add the olive oil, minced garlic, parmesan cheese, chopped fresh parsley, salt, and black pepper.  Combine thoroughly until the potatoes are thoroughly coated in the seasoning.
  4. Transfer the seasoned potatoes to a large baking sheet.  Smash each potato gently with the bottom of a glass jar or potato smasher. Add any remaining garlic or parmesan cheese left in the mixing bowl to the top of the potatoes.  Optional: Add an extra drizzle of olive oil and sprinkling of parmesan cheese.
  5. Bake at 400 degrees for 30-35 minutes.
  6. Remove the smashed potatoes from the oven.  Season with extra salt, black pepper, and fresh parsley.
  7. Serve and enjoy!
