- 24 oz baby potatoes
- 4-5 garlic cloves, minced
- 1/4 cup olive oil
- 1/3 cup parmesan cheese, freshly shredded
- Salt
- Black pepper
- Fresh parsley, chopped
Instructions
- First fill a large pot with water. Heavily salt the water and bring to a boil. Add the baby potatoes. Boil for 20 minutes or until fork tender.
- Drain and thoroughly dry the potatoes.
- Add the boiled potatoes to a large mixing bowl. Add the olive oil, minced garlic, parmesan cheese, chopped fresh parsley, salt, and black pepper. Combine thoroughly until the potatoes are thoroughly coated in the seasoning.
- Transfer the seasoned potatoes to a large baking sheet. Smash each potato gently with the bottom of a glass jar or potato smasher. Add any remaining garlic or parmesan cheese left in the mixing bowl to the top of the potatoes. Optional: Add an extra drizzle of olive oil and sprinkling of parmesan cheese.
- Bake at 400 degrees for 30-35 minutes.
- Remove the smashed potatoes from the oven. Season with extra salt, black pepper, and fresh parsley.
- Serve and enjoy!
