- 1/2 cup butter, melted
- 2 eggs
- 1 cup coconut sugar
- 2 cups all purpose flour
- 1/2 cup almond milk
- 1 cup fresh cranberries
- 4 tbsp orange juice
- 5 tsp orange zest
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 2 tsp baking powder
- 1/4 tsp salt
Orange Glaze
- 5 tbsp powdered sugar
- 1 tbsp orange juice
- 1 tsp orange zest
Instructions
- Set the oven to 350 degrees.
- In a large mixing bowl combine the melted butter, eggs, coconut sugar, almond milk, orange juice, orange zest, and vanilla extract until smooth.
- In a separate bowl combine the all purpose flour, baking powder, cinnamon, and salt. Add the dry ingredients to the wet and combine evenly.
- Coat the cranberries in flour to prevent them from sinking to the bottom of the bread. Add them batter and stir in.
- Transfer to the batter to a greased loaf pan.
- Bake for 45-50 minutes or until golden and a toothpick comes out clean.
- While the bread is baking work on the glaze. Simple combine the powdered sugar, orange juice, and orange zest until smooth.
- Once the bread has completely cooled, remove it from the pan. Drizzle the glaze on top and add an extra orange zest.
- Let set, cut into slices, and enjoy!
