Ingredients
Scale
- 2 cups old fashioned oats
- 1 apple (I recommend honeycrisp!)
- 1/4 cup refined coconut oil, melted
- 1/4 cup pure maple syrup
- 1 tbsp brown sugar
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Set the oven to 325 degrees.
- Next slice the apple very thinly and spread in one layer on a parchment paper lined baking tray. Pat with a paper towel to remove some of the liquid. Bake for 10 minutes.
- Flip the apple slices, pat with a paper towel again, and bake for another 10 minutes.
- Then on the stove over low heat combine the coconut oil, maple syrup, vanilla, and cinnamon until completely melted.
- Next chop up the cooked apple slices. Add the chopped apple to a large mixing bowl along with the oats and salt.
- Pour the liquid mixture on top and mix thoroughly. Ensure all the oats and apples are coated.
- Next spread the granola mixture as thin as possible on a parchment paper lined baking tray. The thinner you spread, the crunchier your granola will be.
- Sprinkle the brown sugar and extra cinnamon on top.
- Bake for 20 minutes.
- Remove from the oven and let cool completely before touching it. Once cooled break up the granola into clusters.
- Enjoy!
