Description

Make breakfast taste like dessert with homemade Chocolate Peanut Butter Granola! This easy and healthy granola is naturally sweetened with honey, has perfectly crunchy clusters, and is loaded with chocolate. Enjoy on a smoothie bowl, in a yogurt parfait, or just by the handful! dairy free and can be gluten free / vegan

  1. Set the oven to 325 degrees.
  2. Start by adding the peanut butter (2 tbsp), honey, coconut oil, and vanilla extract to a small pot on the stove over low heat.  Melt until smooth and combined evenly.
  3. Next combine the oats, peanuts, and cocoa powder in a large mixing bowl.  Pour the peanut butter mixture on top and combine evenly.
  4. Transfer the granola to a parchment paper lined baking tray.  Spread evenly and as thin as possible.
  5. Bake for 10 minutes.
  6. Drizzle the remaining peanut butter (2 tbsp) on top of the granola.  Add the chocolate chips as well.
  7. Bake for another 10 minutes.
  8. Remove the granola from the oven.  You can spread the melted chocolate and peanut butter around a bit with a knife here if you would like. 
  9. Let sit until completely cooled, break up into chunks, and enjoy!
