Chicken Parmesan Quinoa Casserole

Chicken Parmesan Quinoa Casserole is the perfect easy dinner recipe!  Made with shredded chicken, broccoli, and the marinara sauce of your choice  … this cheesy quinoa bake is great for a weeknight dinner or even as meal prep.  This Italian quinoa casserole is sure to be a fan favorite! gluten free


  • 1 cup quinoa, dry
  • 2 chicken breasts
  • 1 head of broccoli
  • 3 cups marinara sauce
  • 3/4 cup grated parmesan cheese, separated
  • 1 1/2 cup shredded mozzarella cheese
  • 2 tsp garlic powder
  • salt
  • pepper


  1. Set the oven to 400 degrees.
  2. Next cook the quinoa according to the package instructions.
  3. While the quinoa is cooking steam the broccoli and boil the chicken.  For the broccoli, steam for about 10 minutes, until bright in color and soft.
  4. To boil the chicken, first bring a pot of water to a boil.  Place the chicken breasts in the pot and boil for 13-15 minutes, or until the chicken is completely cooked through.  Then remove the chicken from the pot and shred.  This can be done easily with two forks.
  5. In a large bowl combine the cooked quinoa, steamed broccoli, and shredded chicken.  Add in the marinara sauce, parmesan cheese (1/4 cup), garlic powder, salt, and pepper.  Combine evenly.
  6. Transfer to a greased baking dish.  Spread out and top with the remaining parmesan cheese and mozzarella cheese.
  7. Bake for 25 minutes.
  8. Let cool, serve with some fresh basil, and enjoy!
