Banana Bread Cookies

Banana Bread Cookies taste like a delicious slice of classic banana bread in the form of easy to make cookies!   1. Set the oven to 350 degrees.
  2. In a large mixing bowl add the mashed banana, light brown sugar, vanilla extract, coconut oil, and egg.  Combine evenly.
  3. Next add in the dry ingredients – whole wheat flour, all purpose flour, baking powder, and salt.  Mix to combine.
  4. Then fold in the chocolate chips.
  5. Place the cookie dough in the fridge to chill for 2 hours.
  6. Remove the dough from the fridge and roll about 2 tablespoon sized scoops of dough into balls.  You should be able to make 10 cookies.
  7. Place the cookie dough balls on a parchment paper lined baking tray. Flatten with your fingers a bit and top with extra chocolate chips.
  8. Bake for 13 minutes.
  9. Enjoy!
