- 1 banana, mashed
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 1/4 cup refined coconut oil, melted
- 1 egg
- 1/4 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/3 cup chocolate chips
- 1/4 tsp baking powder
- 1/8 tsp salt
Instructions
- Set the oven to 350 degrees.
- In a large mixing bowl add the mashed banana, light brown sugar, vanilla extract, coconut oil, and egg. Combine evenly.
- Next add in the dry ingredients – whole wheat flour, all purpose flour, baking powder, and salt. Mix to combine.
- Then fold in the chocolate chips.
- Place the cookie dough in the fridge to chill for 2 hours.
- Remove the dough from the fridge and roll about 2 tablespoon sized scoops of dough into balls. You should be able to make 10 cookies.
- Place the cookie dough balls on a parchment paper lined baking tray. Flatten with your fingers a bit and top with extra chocolate chips.
- Bake for 13 minutes.
