Quinoa Salad
- 1 cup dry quinoa
- 1/2 red onion, finely diced
- 1 red bell pepper, diced
- 1 cup quartered grape tomatoes
- 1 14.5 oz can corn, drained & rinsed
- 1 14.5 oz can black beans, drained & rinsed
Lime Dressing
- 2 tbsp extra virgin olive oil
- 3 fresh limes (juice of 3 limes, zest of 2–3 limes)
- 1 tbsp honey
- 2 tsp cumin
- 1 tsp garlic powder
- Salt
- Black pepper
Instructions
- Start by preparing the quinoa according to the package instructions.
- Next add the cooked quinoa, red onion, red bell pepper, tomatoes, corn, and black beans to a large mixing bowl.
- To a separate small bowl or mason jar add the olive oil, lime juice, lime zest, honey, cumin, garlic powder, salt, and black pepper. Shake or stir to combine.
- Next pour the dressing over the quinoa mixture. Combine all ingredients thoroughly.
- Place the salad in the refrigerator to chill for 30 minutes before serving. This is optional, but recommended to really develop the flavor!
- Serve and enjoy!
