Quinoa Salad

  • 1 cup dry quinoa
  • 1/2 red onion, finely diced
  • 1 red bell pepper, diced
  • 1 cup quartered grape tomatoes
  • 1 14.5 oz can corn, drained & rinsed
  • 1 14.5 oz can black beans, drained & rinsed

Lime Dressing

  • 2 tbsp extra virgin olive oil
  • 3 fresh limes (juice of 3 limes, zest of 23 limes)
  • 1 tbsp honey
  • 2 tsp cumin
  • 1 tsp garlic powder
  • Salt
  • Black pepper

Instructions

  1. Start by preparing the quinoa according to the package instructions.
  2. Next add the cooked quinoa, red onion, red bell pepper, tomatoes, corn, and black beans to a large mixing bowl.  
  3. To a separate small bowl or mason jar add the olive oil, lime juice, lime zest, honey, cumin, garlic powder, salt, and black pepper.  Shake or stir to combine.
  4. Next pour the dressing over the quinoa mixture.  Combine all ingredients thoroughly.
  5. Place the salad in the refrigerator to chill for 30 minutes before serving.  This is optional, but recommended to really develop the flavor!
  6. Serve and enjoy!
