Description
These White Chocolate Chip Brownie Cookies are a healthier treat made with some of my favorite baking ingredients like almond butter, coconut sugar, and whole wheat pastry flour. The perfect cookie to enjoy with a cold glass of milk or hot cup of tea!

- 1/4 cup + 2 tbsp almond butter
- 3 tbsp melted coconut oil
- 1 egg
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/4 cup cocoa powder
- 3/4 cup whole wheat pastry flour
- 1 tbsp maple syrup
- 1 tsp baking powder
- 1/4 cup white chocolate chips
- salt
Instructions
- Set oven to 350 degrees.
- Combine almond butter, melted coconut oil, coconut sugar, egg, vanilla extract, and maple syrup until smooth.
- Add in the whole wheat pastry flower, cocoa powder, and baking powder. It might be a little hard to combine, but the dough will come together.
- Fold in the white chocolate chips as best as you can.
- Cool the dough in the refrigerator for around 10 minutes.
- Roll the dough into balls, place the balls on a greased or lined baking sheet, flatten the cookies, and top with the white chocolate chips that were not folded in or additional ones.
- Sprinkle each cookie with a little bit of salt.
- Bake for 8 minutes.
- Let cool and enjoy!
