Strawberry Banana Baked Oatmeal is the perfect make ahead breakfast! It is full of fresh fruit, naturally sweetened with banana & pure maple syrup, and is of course easy to make. This healthy vegan recipe can be served for brunch and even works great as meal prep too!
Pure Maple Syrup
Start by preparing the fruit. Peel and chop the bananas. Wash and chop the strawberries.
Next add the banana to a large mixing bowl and mash. Then add in the pure maple syrup, almond milk, vanilla extract, and nut butter.
Add the dry ingredients to the liquid mixture - oats, baking powder, salt, and chopped strawberries. Stir to combine.
Add the oatmeal mixture to a large greased baking dish. Spread the oatmeal evenly and top with extra banana & strawberry slices. Bake.

Remove the baked oatmeal from the oven and let cool completely. Cut into squares and top with fruit, nut butter, and honey. Enjoy!
