First chop the celery sticks into small chunks.

Dice the onion finely and slice the carrots.

Add the carrots, celery, onion, and minced garlic to a large pot or dutch oven with the olive oil, garlic powder, salt, and pepper. Sauté for about 10 minutes over medium heat.

Next add in the chicken broth and bring to a boil.  Add the chicken breasts and dry couscous to the soup. Then remove the chicken, shred, and then mix back into the soup.

Add water to the soup if more liquid is needed.  Add fresh dill and more salt & pepper to taste.  Lower the heat and let simmer for a few more minutes.  Enjoy!
