Cinnamon Apple Pie Granola is made with old fashioned oats, real apple chunks, and lots of warm cinnamon. This healthy homemade granola is vegan, easy to make, full of crunchy clusters, and loaded with delicious fall flavor. Enjoy on a yogurt bowl for breakfast or just by the handful as a snack. You’ll love it either way!
Old Fashioned Oats
Refined Coconut Oil
Pure Maple Syrup
Start by preparing your apples - Wash and cut into very thin slices. I recommend using Honeycrisp!
Spread the apple slices in one layer on a parchment paper lined baking tray. Pat with a paper towel to remove some of the liquid. Bake for 10 minutes. Flip the apple slices, pat with a paper towel again, and bake for another 10 minutes.
Next on the stove over low heat combine the coconut oil, maple syrup, vanilla, and cinnamon until completely melted.
Add the oats, dried & chopped apple, and salt to a large mixing bowl. Next pour the melted liquid mixture on top. Combine thoroughly!
Next spread the granola mixture as thin as possible on a parchment paper lined baking tray. Sprinkle extra cinnamon & brown sugar on top. Bake!
Remove the granola from the oven and let cool completely. Then break into chunks. Enjoy!
