Description

Made with essentially 4 ingredients – taco seasoned ground beef, cottage cheese, roasted sweet potato, and avocado – these bowls have 35g of protein and 8g of fiber each. This viral sensation is a perfectly sweet, savory, and spicy whole foods based meal .. it’s no wonder it took the internet by storm!

Roasted Sweet Potatoes

  • 2 large sweet potatoes, peeled & cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Hot Honey Ground Beef Bowls

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 taco seasoning packet
  • 1 cup cottage cheese
  • 1 avocado, or more if you’d like
  • 2 tbsp hot honey
  • Salt
  • Black pepper


Instructions

  1. Set the oven to 400 degrees.
  2. In a large mixing bowl combine the cubed sweet potato, olive oil, garlic powder, paprika, cinnamon, salt, and black pepper. Combine until the sweet potato is thoroughly coated.
  3. Transfer the seasoned sweet potato cubes to a large baking sheet. Roast for 45-60 minutes, stirring throughout.
  4. Once the sweet potato is almost done, prepare the taco meat. Add the olive oil to a pan on the stove over medium high heat. Once hot, add the diced onion. Season with salt and black pepper. Sauté for 5-10 minutes.
  5. Add in the ground beef. Brown the beef and then mix in the taco seasoning according to the package instructions.
  6. Assemble the bowls. Divide the seasoned ground beef, roasted sweet potato, cottage cheese, and avocado into the bowls. Drizzle hot honey to your liking on top.
  7. Serve and enjoy!
