Description

This Veggie Packed Baked Oatmeal is the perfect breakfast to prep ahead of time if you have busy mornings or simply want to get your cooking done all at once!  It is a delicious level of sweet, full of hidden veggies, and the perfect vessel for all your favorite breakfast goodies.


Ingredients

  • 1/2 cup shredded apple
  • 1/2 cup shredded zucchini
  • about 1 cup shredded carrot
  • 1/4 cup almond butter
  • 3 tbsp maple syrup (4 tbsp if you want things to be a little sweeter!)
  • 2 tsp cinnamon (or more to taste!)
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 cup oats
  • 1/2 cup almond milk
  • 1/2 tsp baking powder

Instructions

  1. Set the oven to 350 degrees.
  2. Peel the carrot and apple, then shred the carrot, zucchini, and apple with a cheese grater.
  3. Combine the shredded fruit and vegetables in a bowl.
  4. Add in the almond butter, egg, maple syrup, almond milk, and vanilla extract.
  5. Next stir in the oats, cinnamon, and baking powder.
  6. Pour the mixture into a greased 9×9 baking pan or dish. (I have not tested with a different sized dish, but if you use a smaller one I would suggest adding more baking time)
  7. Top with your choice of chocolate chips. This is an optional step but I highly recommend white chocolate chips!
  8. Bake for 25 minutes.
  9. Let cool and cut into squares.
  10. Store in the fridge and enjoy!
