Sun Dried Tomato Hummus is made with canned chickpeas, sun dried tomatoes, tahini, garlic, and fresh lemon juice. This simple recipe, made in a food processor or blender, turns out creamy, dreamy, & delicious every time. Serve this homemade hummus with crunchy veggies and pita chips for the perfect appetizer.

  • 2 15 oz can chickpeas
  • 1/4 cup sun dried tomatoes
  • 1/4 cup of the sun dried tomato oil
  • 1/4 cup tahini
  • 2 garlic cloves
  • juice of 1/2 lemon
  • 46 tbsp hot water
  • salt
  • pepper

  1. Start by draining and rinsing the chickpeas.  Add them to a saucepan, cover with water, and bring to a boil.  Then reduce the heat and let simmer for about 20 minutes and until the chickpeas are falling apart a bit.
  2. Add the chickpeas to a high speed blender or food processor.  Blend the chickpeas by themselves for a few minutes.
  3. Next add in the sun dried tomatoes, sun dried tomato oil, tahini, garlic, lemon juice, and 4 tbsp of the water.  Blend until smooth, adding more water as needed.
  4. Add salt and pepper to taste.
  5. Serve with pita chips or bread & veggies.  Enjoy!
