This Single Serve Chocolate Chip Pumpkin Oatmeal is the perfect breakfast for a cozy fall morning! Loaded with warm cinnamon, pumpkin spice, & delicious chocolate, this oatmeal recipe will quickly become one of your favorites.
Ingredients

- 1/3 cup pumpkin, canned
- 1/2 cup oats
- 1/3 cup almond milk
- 1 tsp baking powder
- 1–2 tbsp maple syrup (depending on how sweet you want!)
- 1 tbsp chocolate chips
- 1/2 tsp vanilla extract
- cinnamon (to taste!)
- pumpkin pie spice (to taste!)
Instructions
- Set the oven to 400 degrees.
- Combine the pumpkin, almond milk, pure maple syrup, and vanilla extract until smooth.
- Add in the oats and baking powder. Combine. If needed add an extra splash of almond milk!
- Next add pumpkin pie spice and cinnamon to your liking.
- Stir in the chocolate chips.
- Pour the oatmeal mixture into a small baking dish or oven safe bowl.
- Top with more chocolate chips and an extra sprinkle of cinnamon.
- Bake for 20 minutes.
- Let cool and top with peanut butter & honey for ultimate deliciousness! Enjoy!!!
