Sheet Pan Chicken 

  • 1 lb chicken, breast or tenderloins & chopped
  • 1/2 red onion, chopped
  • 1 orange bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 cup chopped pineapple
  • 1/2 lime, juiced

Hawaiian Sauce


Instructions

  1. First set the oven to 400 degrees.
  2. Next add the ketchup, light brown sugar, pineapple juice, soy sauce, red wine vinegar, ground ginger, garlic powder, and water to a saucepan on the stove over medium heat.  Let simmer for a couple of minutes and then lower the heat to let thicken.
  3. Add the chicken, red onion, bell peppers, and pineapple chunks to a large baking sheet.  
  4. Then add half of the Hawaiian sauce to the baking sheet.  Combine everything thoroughly and spread in a single layer.
  5. Bake for 20 minutes, tossing about halfway through.  Then broil at the end for 3-5 minutes.
  6. While the sheet pan is baking, re-heat or keep the other half of the sauce warm to use for topping.
  7. Remove the sheet pan from the oven and add the juice of 1/2 a lime.  Toss thoroughly.
  8. Serve with white rice and the extra Hawaiian sauce.  Enjoy!
