Sheet Pan Chicken
- 1 lb chicken, breast or tenderloins & chopped
- 1/2 red onion, chopped
- 1 orange bell pepper, chopped
- 1 red bell pepper, chopped
- 1 cup chopped pineapple
- 1/2 lime, juiced
Hawaiian Sauce
- 1/3 cup ketchup
- 1/3 cup light brown sugar
- 1/3 cup pineapple juice
- 1/4 cup soy sauce
- 1 tbsp red wine vinegar
- 1 1/2 tsp ground ginger
- 1 tsp garlic powder
- 1/2 cup water
Instructions
- First set the oven to 400 degrees.
- Next add the ketchup, light brown sugar, pineapple juice, soy sauce, red wine vinegar, ground ginger, garlic powder, and water to a saucepan on the stove over medium heat. Let simmer for a couple of minutes and then lower the heat to let thicken.
- Add the chicken, red onion, bell peppers, and pineapple chunks to a large baking sheet.
- Then add half of the Hawaiian sauce to the baking sheet. Combine everything thoroughly and spread in a single layer.
- Bake for 20 minutes, tossing about halfway through. Then broil at the end for 3-5 minutes.
- While the sheet pan is baking, re-heat or keep the other half of the sauce warm to use for topping.
- Remove the sheet pan from the oven and add the juice of 1/2 a lime. Toss thoroughly.
- Serve with white rice and the extra Hawaiian sauce. Enjoy!
