Pumpkin Pie Oatmeal
- 1 cup oats
- 1 cup almond milk
- 1/2 cup pumpkin
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tsp vanilla
- 1 tbsp pure maple syrup
- pinch of salt
Candied Pecans
- 1/2 cup pecans
- 1/2 tbsp butter
- 1/2 tsp cinnamon
- 1 tsp pure maple syrup
Instructions
- Start on the candied pecans. Add the pecans to a pan with the butter, maple syrup, and cinnamon. Sauté on medium to high heat until crunchy and then remove from the heat.
- While the pecans are cooking start on the oatmeal. Add the oats, pumpkin, and almond milk to a pot and cook as you would any oatmeal.
- Add in the cinnamon, pumpkin pie spice, maple syrup, vanilla extract, and salt. Simmer until thick.
- Add the oatmeal to a bowl. Top with the candied pecans. I also suggest topping with more cinnamon and a splash of maple syrup.
