Pumpkin Pie Oatmeal with Candied Pecans is fall in a bowl!  Creamy stovetop oats topped with crunchy cinnamon nuts, this recipe is like pumpkin pie in the form of a quick & healthy breakfast.  A true must make!  gluten free + refined sugar free

Ingredients

Pumpkin Pie Oatmeal

  • 1 cup oats
  • 1 cup almond milk
  • 1/2 cup pumpkin
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 1 tbsp pure maple syrup
  • pinch of salt

Candied Pecans

  • 1/2 cup pecans
  • 1/2 tbsp butter
  • 1/2 tsp cinnamon
  • 1 tsp pure maple syrup

Instructions

  1. Start on the candied pecans. Add the pecans to a pan with the butter, maple syrup, and cinnamon. Sauté on medium to high heat until crunchy and then remove from the heat.
  2. While the pecans are cooking start on the oatmeal. Add the oats, pumpkin, and almond milk to a pot and cook as you would any oatmeal.
  3. Add in the cinnamon, pumpkin pie spice, maple syrup, vanilla extract, and salt. Simmer until thick.
  4. Add the oatmeal to a bowl. Top with the candied pecans. I also suggest topping with more cinnamon and a splash of maple syrup.
  5. Enjoy!
