- 1 banana, mashed
- 1 can 13.5 oz coconut milk
- 1/2 cup almond milk
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 cup chopped pineapple
- 2 cups old fashioned oats
- 1 cup shredded coconut
- 2 tsp baking powder
- 1/4 tsp salt
Instructions
- Set the oven to 350 degrees.
- To a large mixing bowl add the mashed banana, coconut milk, almond milk, honey, and vanilla extract. Combine until smooth.
- Next add in the dry ingredients – oats, shredded coconut, baking powder, and salt. Mix thoroughly.
- Stir in the chopped pineapple.
- Transfer the oatmeal mixture to a prepared baking dish and spread evenly. Bake for 25-35 minutes depending on the depth of your dish.
- Top with an extra sprinkle of coconut, chopped pineapple, and enjoy.
