Instructions

  1. Set the oven to 350 degrees.
  2. To a large mixing bowl add the mashed banana, coconut milk, almond milk, honey, and vanilla extract.  Combine until smooth.
  3. Next add in the dry ingredients – oats, shredded coconut, baking powder, and salt.  Mix thoroughly.
  4. Stir in the chopped pineapple.
  5. Transfer the oatmeal mixture to a prepared baking dish and spread evenly.  Bake for 25-35  minutes depending on the depth of your dish.
  6. Top with an extra sprinkle of coconut, chopped pineapple, and enjoy.
