These Peanut Butter & Jelly Cookie Sandwiches taste like childhood in the form of an easy and healthy dessert! Soft and chewy peanut butter cookies stuffed with the jelly of your choice, these little treats are bound to be one of your new favorite recipes.  gluten free – dairy & refined sugar free option


  • 1/2 cup peanut butter (runny natural kind!)
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1/2 cup almond flour
  • 3 tbsp coconut flour
  • 1/4 cup white chocolate chips
  • 1/3 cup jelly or jam of choice (approximately! i didn’t measure)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp salt


  1. Set the oven to 350 degrees.
  2. In a mixing bowl combine the peanut butter, maple syrup, egg, and vanilla extract.
  3. In a separate bowl combine the almond flour, coconut flour, baking powder, and salt.
  4. Add the dry ingredients to the wet and combine.
  5. Stir in the white chocolate chips.
  6. Chill the dough in the fridge for about 10 minutes.
  7. Remove from the fridge and roll into about teaspoon sized balls. I got 19 small cookies (9 sandwiches, with one cookie leftover!) Place them on a greased or lined baking tray and flatten.
  8. Bake for 10 minutes.
  9. Remove from the oven and let cool.
  10. Top one cookie with a small spoonful of jelly or jam, then top with another cookie.
  11. Enjoy!
  12. Store in an airtight container on the counter for a day or two and then move to the fridge to keep them the freshest!
