Paleo Sweet Potato Brownies

Description

These Paleo Sweet Potato Brownies are bursting with rich chocolate flavor, have an incredible slightly under-baked texture, and are made with good-for-you ingredients.  The perfect healthier sweet treat!


Ingredients

  • 1 cup mashed sweet potato
  • 1 egg
  • 3/8 cup coconut sugar
  • 1/4 cup + 1 tbsp cocoa powder
  • 1/2 tsp vanilla extract
  • 1/2 cup dairy free chocolate chips (melted)
  • 1/2 cup almond flour
  • 2 tbsp almond milk
  • 1 tsp baking powder
  • salt

Instructions

  1. Set the oven to 400 degrees.
  2. Poke several wholes in a lager sweet potato (or 2 smaller ones) and then roast for about 60 minutes. You can do shorter, as long as the sweet potato is soft, but the longe you roast it, the sweeter the sweet potato will be, and then the sweeter your brownies will be.
  3. Mash the sweet potato and measure out 1 cup of it, let it cool.  Change the oven temperature to 350 degrees.
  4. Combine the mashed sweet potato with the egg, coconut sugar, vanilla extract, and almond milk.
  5. Microwave the dairy free chocolate chips with a tiny bit of coconut oil in 10-15 second increments. Mix the chocolate in between each round. Repeat the process until it is fully melted.
  6. Add the melted chocolate into the sweet potato mixture and combine until smooth.
  7. Next add in the almond flour, cocoa powder, baking powder, and a sprinkle of salt.
  8. Spread the brownie batter in a greased or parchment paper lined 8×8 baking tray and sprinke with some more salt.
  9. Bake for 18-20 minutes at 350 degrees. (You can also do the toothpick trick here where you stick the toothpick in to see if the brownies are done. However, with these brownies because of the slightly underbaked texture it won’t come out completely clean. Just make sure its not pure batter on the toothpick haha!)

  11. You can store on the counter for a few days, but after that I recommend moving to the freezer.
