Oatmeal Cookie Sandwiches with Cream Cheese Filling

These Oatmeal Cookie Sandwiches with Cream Cheese Filling are a truly delicious dessert.  They have a warm cinnamon flavor, perfectly chewy cookies, a sweet and tangy cream cheese filling, and are made with better-for-you ingredients! Gluten Free & Refined Sugar Free

Cookies

  • 1/3 cup butter softened
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup pure maple syrup
  • 1 cup almond flour
  • 1 cup oats
  • 1/2 cup oat flour (read the notes for how you can make your own!)
  • 2 tsp cinnamon
  • 1/2 tsp baking powder
  • pinch of salt
  • coconut sugar (just a little bit to sprinkle on top of each cookie!)

Cream Cheese Filling

  • 2 tbsp softened butter
  • 3 tbsp cream cheese
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Set the oven to 350 degrees.
  2. Combine the butter and egg with a hand mixer until smooth.
  3. Add in the maple syrup and vanilla extract and mix again.
  4. In a separate bowl combine the almond flour, oat flour, oats, cinnamon, baking powder, and pinch of salt.
  5. Add the dry ingredients to the wet ingredients and stir to combine.
  6. Place in the fridge for about 10 minutes to chill.
  7. Remove the dough from the fridge and roll into small balls, less than a tablespoon sized scoops.
  8. Place the balls onto a greased or parchment paper lined baking tray and flatten them with your fingers. There should be 24 cookies.
  9. Sprinkle each cookie with some coconut sugar and cinnamon.  No actual measurements here, just do as much or as little as you want!
  10. Bake for 10 minutes.
  11. While the cookies are baking, make your cream cheese filling. Combine the cream cheese, butter, maple syrup, and vanilla extract with a hand mixer.
  12. Remove the cookies from the oven. Place the cream cheese filling in the fridge to cool and set a little while the cookies cool.
  13. Once the cookies have cooled, place a generous dollop of the filling on 12 of the cookies. Top each cookie (with filling) with another cookie (without filling) and press down to make the filling spread out. You will have 12 cookie sandwiches!

Notes

  • You can make your own oat flour by simply blending oats in a high speed blender or food processor until a fine flour forms.
