Description

Lightened Up Broccoli Cheddar Soup is going to be your new favorite soup for those cold days! This easy, one-pot recipe is creamy, cheesy, cozy, and of course delicious. It’s made with sharp cheddar cheese, fresh vegetables, and no cream. Grab yourself a bowl, some toasted bread to dip, and enjoy!


Ingredients

  • 1 yellow onion
  • 35 garlic cloves
  • 2 broccoli crowns, chopped
  • 2 cups carrots, finely chopped
  • 3 tbsp olive oil
  • 6 cups (48 fl oz) chicken broth
  • 1 cup milk, 2%
  • 8 oz sharp cheddar cheese, shredded
  • salt & pepper

Instructions

  1. Start by preparing all your vegetables.  Dice the onion, mince the garlic, chop the carrot finely, and chop the broccoli into bite sized chunks.
  2. Next add the olive oil, carrots, onion, and garlic to a large pot on the stove over medium heat.  Add salt & pepper.  Sauté for several minutes until soft and fragrant.
  3. Then add in the chicken broth and broccoli.  Bring to a boil and let simmer for about 10 minutes.
  4. Reduce the heat to low.  Add the milk and then add the cheddar cheese in slowly.  The low heat and slow addition will help the cheese melt in nicely rather than clumping together.
  5. Add salt & pepper to taste and let the soup simmer for another 10 minutes for all the flavors to combine.
  6. Serve with extra cheddar cheese on top & enjoy!

  • Be generous with your salt & pepper!
