Description

These Lemon Oatmeal Energy Balls are the perfect little bite sized goodie!  They are made with a few simple & healthy ingredients, are no-bake, and are filled with delicious lemony goodness.  Great as a pre-workout or afternoon snack!


Ingredients

Scale
  • 1/2 cup soaked and chopped dtaes
  • 1/4 cup cashew butter
  • zest of 1 1/2 lemons
  • juice of 1 lemon
  • 1 cup oats
  • 3 tbsp almond flour
  • 1 tsp honey
  • 1/4 tsp vanilla extract

Instructions

  1. First soak the dates (with the pits removed!) in hot water for about an hour. You can’t skip this step! It is very important to soften the dates to be able to blend.
  2. Blend the dates in a food processor with the cashew butter, lemon juice, lemon zest, honey, and vanilla extract until smooth. It is okay if there are some remaining date chunks. I have not tried with a high speed blender, but it should also work!
  3. Then add in the oats and continue to blend. The oats will not completely blend in and that is okay! They will add a nice texture.
  4. Then remove the mixture from the food processor and add to a bowl. Stir in the almond flour to thicken.
  5. Cool in the fridge for about 15 minutes.
  6. Remove from the fridge and roll about teaspoon sized spoonfuls of the mixture into balls. Place on a baking tray.
  7. Cool again in the fridge on the baking tray for another 15 minutes to ensure they are set.
  8. Then you can move them to a container and store in the fridge.
  9. Enjoy!

Notes

  • You must soak the oats before blending!
