Featuring adorable noodles tossed with salty salami, a bevy of crunchy, colorful veggies, fresh balls of creamy mozzarella, and a bright homemade Italian dressing, this delightful dish is perfect as a standalone meal or as an accompaniment to all your BBQ favorites.

Pasta Salad
- 8 oz dry pasta
- 8 oz mozzarella cheese pearls
- 2 oz salami, chopped
- 1/2 cup chopped English cucumber
- 14.5 oz can diced tomatoes, drained
- 7 oz jar roasted red pepper, chopped
- 1/4 cup chopped fresh basil
- 1/2 red onion, diced
Dressing
- 1/4 cup extra virgin olive oil
- 1/2 lemon, juiced
- 2 tbsp red wine vinegar
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt
- Black pepper
Instructions
- Cook the pasta according to the package directions. Set aside.
- Next add the cooked pasta, mozzarella cheese, salami, cucumber, diced tomatoes, roasted red pepper, fresh basil, and red onion to a large mixing bowl.
- To a small bowl or jar add the olive oil, lemon juice, red wine vinegar, garlic powder, dried oregano, and dried basil. Whisk to combine.
- Pour the dressing over the pasta salad ingredients. Toss to combine thoroughly. Season with salt and pepper to taste.
- Optional: Refrigerate the pasta salad for 30 minutes – 1 hour before serving.
- Serve and enjoy!
