Cocoa Baked Oats are an easy, healthy, and delicious single serve breakfast recipe! Made with old fashioned oats, almond milk, pure maple syrup, cocoa powder, and chocolate chips … this double chocolate blended oatmeal has a cake-like texture and rich taste. Top with peanut butter and fresh fruit for the perfect breakfast, snack, or even dessert!
Ingredients
- 1/2 cup old fashioned oats
- 1/2 cup almond milk
- 1 tbsp cocoa powder
- 1 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tbsp chocolate chips
- Pinch of salt
Instructions
- Set the oven to 400 degrees.
- Add the old fashioned oats, almond milk, cocoa powder, pure maple syrup, vanilla extract, baking powder, and a pinch of salt to a blender. Blend until smooth.
- Transfer the blended oat mixture to a greased ramekin dish and spread evenly.
- Top with chocolate chips.
- Bake for 20 minutes.
- Add your favorite toppings and enjoy! I like fresh fruit, peanut butter, and honey.

Tips:

Don’t over-blend the oats! I recommend blending the ingredients until just combined. This will leave your chocolate-baked oats lighter and fluffier. Over-blending will result in denser oats.

Grease the ramekin or baking dish with cooking spray. This makes clean up so much easier.

Add as many chocolate chips as you’d like. Because we all know … the more chocolate, the better!

Serve with a splash of milk or cream. I like to add a bit of extra moisture on top!
