Description

Cocoa Baked Oats are an easy, healthy, and delicious single serve breakfast recipe! Made with old fashioned oats, almond milk, pure maple syrup, cocoa powder, and chocolate chips … this double chocolate blended oatmeal has a cake-like texture and rich taste. Top with peanut butter and fresh fruit for the perfect breakfast, snack, or even dessert!


Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup almond milk
  • 1 tbsp cocoa powder
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tbsp chocolate chips
  • Pinch of salt

Instructions

  1. Set the oven to 400 degrees.
  2. Add the old fashioned oats, almond milk, cocoa powder, pure maple syrup, vanilla extract, baking powder, and a pinch of salt to a blender. Blend until smooth.
  3. Transfer the blended oat mixture to a greased ramekin dish and spread evenly.
  4. Top with chocolate chips.
  5. Bake for 20 minutes.
  6. Add your favorite toppings and enjoy! I like fresh fruit, peanut butter, and honey. 

Notes

Tips:

  • Don’t over-blend the oats! I recommend blending the ingredients until just combined. This will leave your chocolate-baked oats lighter and fluffier. Over-blending will result in denser oats.

  • Grease the ramekin or baking dish with cooking spray. This makes clean up so much easier.

  • Add as many chocolate chips as you’d like. Because we all know … the more chocolate, the better!

  • Serve with a splash of milk or cream. I like to add a bit of extra moisture on top!
