- 1/2 cup cashew butter
- 1/3 cup coconut sugar
- 1 egg
- 1 tbsp applesauce
- 1/2 tsp vanilla extract
- 2/3 cup almond flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 cup semi-sweet chocolate chips
Instructions
- Set the oven to 350 degrees.
- In a large mixing bowl combine the cashew butter, coconut sugar, egg, applesauce, and vanilla extract until smooth.
- Next add in the dry ingredients – almond flour, baking powder, and salt. Combine until smooth.
- Stir in the chocolate chips.
- Chill the dough in the refrigerator for 20 minutes.
- Remove the dough from the fridge and scoop about tablespoon sized balls onto a greased or parchment paper lined baking sheet. Flatten with your finger tips into a cookie shape. (You should be able to make 10 cookies.)
- Add more chocolate chips on top and a sprinkle of salt.
- Bake for 10 minutes.
- Let cool and enjoy!
