Greek Orzo Pasta Salad

Greek Orzo Pasta Salad is veggie packed, made with a homemade lemony & oregano flavored greek dressing, and is the perfect summer side dish. This recipe is made with healthy and flavorful ingredients like cucumber, red onion, grape tomatoes, real lemon juice, salty crumbled feta, and chickpeas! It is light, bright, and deliciously colorful. Sure to be a total crowd pleaser!

Pasta Salad

  • 1 lb orzo pasta
  • 1 cucumber, chopped
  • 3/4 cup crumbled feta cheese
  • 1/4 cup red onion, chopped
  • 1 cup grape tomatoes, halved
  • 1 19 oz can chickpeas

Greek Dressing

  • juice of 1 1/2 lemons
  • 1/2 cup + 1 tbsp olive oil
  • 4 1/2 tbsp red wine vinegar
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp oregano
  • salt & pepper

Instructions

  1. Start by cooking your orzo according to the package instructions.  Set aside and let cool.  (A tip is to toss with a bit of olive oil & place in the fridge to speed up the process.)
  2. Next chop the red onion finely, halve the grape tomatoes, and chop the cucumber.
  3. Then drain and rinse the canned chickpeas.
  4. Make the greek dressing by combining the lemon juice, olive oil, red wine vinegar, garlic powder, oregano, salt, and pepper.  Mix very well.
  5. Add the cooled orzo to a large mixing bowl with the tomatoes, red onion, cucumber, feta cheese, chickpeas, and the homemade greek dressing.  Toss to combine.
  6. Refrigerate for 1-2 hours before serving.
  7. Enjoy!
