Description

Bring a taste of the Mediterranean to your table with my easy Greek Ground Beef Orzo Skillet recipe! Perfectly al dente rice-shaped pasta is simmered with juicy ground beef, a smattering of fresh vegetables and herbs, and topped with briny feta cheese for a one-pan meal that’ll have everyone clamoring for seconds.


Ingredients

  • 1 pound Lean Ground Beef
  • 2 Tablespoons Olive Oil
  • 1 Cup Yellow Onion, diced
  • 1 Cup Red Bell Pepper, thinly sliced
  • 3 cloves Garlic, Minced
  • 2 teaspoons Fresh Oregano
  • 2 teaspoon Fresh Thyme
  • ¼ teaspoon Red Pepper Flakes
  • 1 teaspoon Kosher Salt
  • 1 Cup Orzo
  • 2 Cups Beef Broth
  • 1 medium Zucchini, sliced and quartered
  • ½ Cup Sun Dried Tomatoes
  • 3 Cups Baby Spinach
  • Juice from ½ lemon
  • Feta cheese, fresh tomatoes and parsley for garnish 


Instructions

  1.  Add the ground beef to a skillet over medium heat. Break apart and cook until browned. Remove the cooked beef to a plate tented with foil. Pour off any fat.

  2. Add the olive oil to the skillet. Once the oil is hot, add in the onion and bell peppers. Cook until softened, about 5 minutes.

  3. Add in the garlic, oregano, thyme, red pepper flakes and salt. Cook while stirring for one minute or until fragrant.

  4. Return the ground beef to the pan. Add the orzo, beef broth, zucchini, and sun dried tomatoes. Stir well. Bring to a simmer and cook until the water is absorbed and the orzo is nearly cooked through.

  5. Add the spinach and stir in. Cook until the spinach is wilted.

  6. Remove from the heat and squeeze the juice of ½ lemon over the meal.

  7. Serve with tomatoes, feta and fresh herbs for garnish.
