Ingredients
- 1 pound Lean Ground Beef
- 2 Tablespoons Olive Oil
- 1 Cup Yellow Onion, diced
- 1 Cup Red Bell Pepper, thinly sliced
- 3 cloves Garlic, Minced
- 2 teaspoons Fresh Oregano
- 2 teaspoon Fresh Thyme
- ¼ teaspoon Red Pepper Flakes
- 1 teaspoon Kosher Salt
- 1 Cup Orzo
- 2 Cups Beef Broth
- 1 medium Zucchini, sliced and quartered
- ½ Cup Sun Dried Tomatoes
- 3 Cups Baby Spinach
- Juice from ½ lemon
- Feta cheese, fresh tomatoes and parsley for garnish
Instructions
-
Add the ground beef to a skillet over medium heat. Break apart and cook until browned. Remove the cooked beef to a plate tented with foil. Pour off any fat.
-
Add the olive oil to the skillet. Once the oil is hot, add in the onion and bell peppers. Cook until softened, about 5 minutes.
-
Add in the garlic, oregano, thyme, red pepper flakes and salt. Cook while stirring for one minute or until fragrant.
-
Return the ground beef to the pan. Add the orzo, beef broth, zucchini, and sun dried tomatoes. Stir well. Bring to a simmer and cook until the water is absorbed and the orzo is nearly cooked through.
-
Add the spinach and stir in. Cook until the spinach is wilted.
-
Remove from the heat and squeeze the juice of ½ lemon over the meal.
-
Serve with tomatoes, feta and fresh herbs for garnish.
