  1. Set the oven to 350 degrees.
  2. Next melt the chocolate chips and coconut oil together until smooth.  You can do this on the stove over low heat or in the microwave.  If using the microwave, I recommend heating at 15 second intervals and stirring in between each one.
  3. Then transfer the melted chocolate to a large mixing bowl.  Stir in the coconut sugar and vanilla extract.
  4. In a separate bowl beat the 2 eggs with an electric mixer for a few minutes until foamy & bubbly.  Then add to the brownie batter and stir to combine.
  5. Add the dry ingredients – almond flour, cocoa powder, baking powder, and salt.  Combine evenly until a cookie dough begins to form.
  6. Then place the cookie dough in the refrigerator to chill for at least 1 hour.  Chilling for 2 hours though will make the dough much easier to handle!
  7. Remove from the fridge and roll about tablespoon sized scoops of the dough into balls.  Place on a parchment lined baking tray with enough space for some spreading.
  8. Bake for 12 minutes.
  9. Remove from the oven and bang the pan on the counter several times.  This helps the cookies form properly.
  10. Sprinle with salt & enjoy!
