Beef Meatballs
- 1 lb ground beef
- 1/3 cup Panko breadcrumbs
- 1 egg
- 1 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 Green onion bunch (white parts), chopped
Firecracker Sauce
- 1/3 cup buffalo sauce
- 1/4 cup honey
- 3 tbsp light mayo
- 2 tbsp soy sauce
- 1 tsp minced garlic
- 1 tsp minced ginger
Serving
- White rice
- Broccoli
- Green onion bunch (Green parts)
- Sesame seeds
Instructions
- Set the oven to 400 degrees.
- Add the ground beef, Panko breadcrumbs, egg, soy sauce, minced garlic, minced ginger, and chopped green onion (white parts) to a large mixing bowl. Combine thoroughly.
- Roll the meat mixture into about 2 tbsp sized meatballs. You should be able to make 12 meatballs. Place on a parchment paper lined baking sheet.
- Bake for 18-20 minutes.
- Meanwhile, prepare the firecracker sauce. Add the buffalo sauce, honey, light mayo, soy sauce, minced garlic, and minced ginger to another mixing bowl. Combine thoroughly. A whisk or electric frother whisk is helpful here.
- Remove the meatballs from the oven and add to the firecracker sauce. Toss carefully and thoroughly to combine.
- Serve and enjoy! Serve firecracker meatballs with white rice and veggies. Garnish with green onions and sesame seeds.
