  • 2 tbsp salted butter
  • 1 tbsp minced garlic
  • 1/2 cup whole milk
  • 1 cup plain greek yogurt, nonfat
  • 1 cup shredded parmesan cheese
  • 8 oz pasta
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

  1. Cook the pasta according to the package directions. Once cooked, set aside.
  2. Meanwhile add the butter to a large pan on the stove over medium heat. Once melted, add the minced garlic. Sauté for 1-2 minutes until the garlic is fragrant. Then stir in the milk.
  3. Remove the pan from the heat and allow to cool for a few minutes. Then add the plain yogurt to the milk mixture. Stir until well combined. Make sure the sauce is not too hot when adding the yogurt, otherwise it could curdle!
  4. Add the shredded parmesan cheese to the sauce.  Place the pan back on the stove over low heat.  Stir until the cheese is completely melted into the sauce.  Make sure to melt the cheese slowly over a very low heat.  If the heat is too high, the greek yogurt could curdle.
  5. Season the the sauce with salt and black pepper to taste.
  6. Add the cooked pasta to the greek yogurt pasta sauce. Toss to combine.  Garnish with cracked black pepper, fresh parsley, and extra parmesan cheese.
  7. Serve and enjoy!
