Description
This Chunky Monkey Granola is a delicious combination of banana, peanut butter, and chocolate. It is super easy to make and only requires a few simple and healthy ingredients! Makes for a great topping to yogurt or smoothie bowls and is perfect on its own as a snack.

- 1 mashed banana, about 1/4 cup
- 2 cups oats
- 4 tbsp olive oil
- 4 tbsp peanut butter
- 2 tbsp dairy free chocolate chips
- 1 tbsp maple syrup
- 1/2 tsp vanilla
- sprinkle of cinnamon, probably about 1/2 tsp
- pinch of salt
Instructions
- Set the oven to 325 degrees.
- Mash one banana in a large bowl. Should be about 1/4 cup.
- Combine the peanut butter (3 tbsp), olive oil, maple syrup, vanilla extract, cinnamon, and salt on the stove over low heat.
- Then combine this mixture with the mashed banana.
- Add the oats to the mixture and mix well. You want to thoroughly and evenly coat the oats.
- Next get a baking tray and line it with parchment paper. Pour the granola onto the tray and spread it out very thin with a spatula. You want it to be thin so the granola can get crispy and crunchy!
- Bake for 15 minutes.
- Remove from the oven and top with chocolate chips and peanut butter (1 tbsp). Evenly sprinkle the chocolate and drizzle the peanut butter.
- Bake again for 5 minutes.
- Remove from the oven and spread out the melty chocolate chips and peanut butter.
- Let the granola cool completely before touching it. This is very important if you want the granola to get crispy and crunchy.
- Once it is completely cooled break it up into small chunks.
- Store in an air tight container and enjoy!
