Chocolate Cherry Oat Bars

These Chocolate Cherry Oat Bars are a treat for any time of day!  They have the perfect level of sweetness for an afternoon snack or even breakfast, but also enough chocolate to be enjoyed as a delicious dessert. Think soft & chewy, a little buttery, and that wonderful chocolate cherry combo in every bite! 


  • 1/4 cup butter softened
  • 1 egg
  • 1/4 cup applesauce
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 3/4 cup oats
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup chocolate chips
  • 1/4 cup chopped cherries 


  1. Set the oven to 350 degrees.
  2. In a mixing bowl combine the butter, egg, applesauce, coconut sugar, and vanilla extract. This works best with a hand mixer, but if you do not have one a whisk or spoon will also work.
  3. In a separate bowl combine the whole wheat pastry flour, oats, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and combine.
  5. Stir in the cherries and chocolate chips.
  6. Pour the batter into a greased or lined 8×8 baking dish. Top with more cherries, chocolate, and a sprinkle of salt.
  7. Bake for 17-20 minutes. I like mine a little on the undercooked side so I went with 17!
  8. Let cool, cut into squares, and enjoy!
