Description
These Chocolate Cherry Oat Bars are a treat for any time of day! They have the perfect level of sweetness for an afternoon snack or even breakfast, but also enough chocolate to be enjoyed as a delicious dessert. Think soft & chewy, a little buttery, and that wonderful chocolate cherry combo in every bite!

- 1/4 cup butter softened
- 1 egg
- 1/4 cup applesauce
- 1/3 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 cup whole wheat pastry flour
- 3/4 cup oats
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 cup chocolate chips
- 1/4 cup chopped cherries
Instructions
- Set the oven to 350 degrees.
- In a mixing bowl combine the butter, egg, applesauce, coconut sugar, and vanilla extract. This works best with a hand mixer, but if you do not have one a whisk or spoon will also work.
- In a separate bowl combine the whole wheat pastry flour, oats, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and combine.
- Stir in the cherries and chocolate chips.
- Pour the batter into a greased or lined 8×8 baking dish. Top with more cherries, chocolate, and a sprinkle of salt.
- Bake for 17-20 minutes. I like mine a little on the undercooked side so I went with 17!
- Let cool, cut into squares, and enjoy!
