Description

These deliciously decadent & chocolatey Brownie Batter Truffles taste just like those brownie batter chunks in ice cream!  They are gluten free, grain free, refined sugar free, and vegan.


Ingredients

Scale
  • 15.5 oz can chickpeas
  • 1/2 cup almond  butter
  • 1/4 cup + 1 tbsp maple syrup
  • 1 tbsp almond milk
  • 1/2 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup dairy free chocolate chips
  • 1 tsp coconut oil
  • salt

Instructions

  1. Blend chickpeas, almond butter, maple syrup, almond milk, and vanilla extract in a high speed blender or food processor until smooth.
  2. Move the mixture to a bowl and add in the almond flour, cocoa powder, and sprinkle of salt.
  3. Roll the batter into balls, place balls on a baking tray, place in the freezer. If initially the batter is difficult to roll into balls you can freeze before rolling.
  4. Freeze rolled balls for about an hour.
  5. Melt the chocolate chips with coconut oil in the microwave or with a double boiler.
  6. Coat each ball in the melted chocolate. (Optional Fun Drizzle: wait for the initial coating of chocolate to harden and then drizzle more on top)
  7. Store in the freezer and enjoy!
