Description

Barbecue Ranch Chicken Salad is an easy, healthy, and delicious lunch or dinner recipe! Made with saucy barbecue chicken, crunchy romaine lettuce, juicy tomatoes, sweet corn, black beans, tortilla strips, Mexican style cheese, and Wish-Bone Ranch Dressing … this hearty salad is fresh, flavorful, and protein packed! It is absolutely perfect to meal prep or to enjoy as a light dinner.

Barbecue Chicken

  • 1 tbsp olive oil
  • 1 lb thinly sliced chicken breasts
  • 1/4 cup barbecue sauce
  • Salt
  • Black pepper

Salad

  • 12 oz romaine lettuce, chopped
  • 3/4 cup black beans
  • 3/4 cup corn
  • 1 cup halved grape tomatoes
  • 1/3 cup diced red onion
  • 1/2 cup tortilla strips
  • 1/2 cup Mexican blend cheese
  • 1/4 cup Wish-Bone Ranch Dressing

Instructions

  1. First pat the thin chicken breasts dry with paper towels.  Season both sides with salt and black pepper.
  2. Add the olive oil to a large pan or skillet on the stove over medium heat.  Once the pan is hot, add the chicken.  Cook on both sides for about 3-4 minutes, depending on the thickness.  I like to leave the chicken to sit on each side to develop a nice golden brown sear.
  3. Once cooked, remove the chicken from the pan.  Cut the chicken into bite sized pieces and add them to a medium bowl with the barbecue sauce.  Combine thoroughly and ensure that each chicken piece is coated in the sauce.
  4. Next assemble the salad.  Place the romaine lettuce in the bottom of a large serving bowl and add all of the toppings – barbecue chicken, black beans, corn, grape tomatoes, red onion, cheese, and tortilla strips. 
  5. Drizzle Wish-Bone Ranch Dressing on top.  Serve and enjoy!
