Description

Banana Bread Baked Oats are an easy, healthy, and delicious breakfast recipe! Made with one ripe banana, old fashioned oats, almond milk, and pure maple syrup … this chocolate chip studded morning meal is just as nutritious as it is delicious. It has a soft, moist, and fluffy cake-like texture and warm, sweet banana bread taste. Sure to be a new breakfast time staple!


Ingredients

  • 1 banana
  • 1/3 cup almond milk
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Chocolate chips
  • Pinch of salt

Instructions

  1. Add 1/2 of the banana, almond milk, pure maple syrup, vanilla extract, oats, cinnamon, baking powder, and a pinch of salt to a high speed blender.  Blend until smooth, but don’t over-mix. 30-45 seconds should be just enough!
  2. Pour the blended oat mixture into a small baking dish or ramekin. Slice the other half of the banana.  Top with chocolate chips and the banana slices. Bake for 20 minutes.
  3. Top with peanut butter and a drizzle of honey.  Serve and enjoy!
