Description

If you’re looking to add a little brightness to your holiday table, try my Apple Arugula Salad with Maple Balsamic Dressing! Featuring sweet-tart fruit, peppery greens, crunchy candied walnuts, chewy dates, and creamy cheddar all tossed in a tangy, autumnal dressing, this simple 10-ingredient fall arugula salad is the perfect counterpoint to all the heavy fare in a traditional Thanksgiving or Christmas spread.


Ingredients

Salad

  • 5 oz arugula
  • 1/2 cup chopped medjool dates
  • 1 Granny Smith apple, thinly sliced
  • 5 oz white cheddar cheese, cubed

Candied Walnuts

  • 1 cup walnuts
  • 1 tbsp butter
  • 2 tbsp pure maple syrup
  • Pinch of salt

Maple Balsamic Vinaigrette

  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp pure maple syrup
  • 1 tsp dijon mustard
  • Salt
  • Black pepper

Instructions

  1. Start by preparing the candied walnuts. Add the walnuts, butter, pure maple syrup, and a pinch of salt to a small pan on the stove over medium-high heat. Bring the mixture to a boil and then reduce the heat to low.  Simmer for about 2 minutes.  Then pour the candied walnuts onto a parchment paper lined small baking sheet or plate. Add salt. Place in the refrigerator to cool.
  2. Next add the olive oil, balsamic vinegar, pure maple syrup, and dijon mustard to a small jar or bowl. Combine thoroughly. Season with salt and black pepper to taste.
  3. Add the arugula, chopped dates, white cheddar cheese cubes, candied walnuts, and maple balsamic vinaigrette to a large mixing bowl.  Toss to combine.
  4. Next transfer the salad to a serving bowl. Arrange the apple slices on top. (Or just toss in with the other ingredients.)
  5. Serve and enjoy!
