Start by preparing your onion and garlic. Dice the onion and mince the fresh garlic cloves.
Next prepare the celery and carrot sticks. Peel & slice the carrot. Chop the celery into bite sized pieces.
Add the olive oil, onion, carrot, and celery to a large pot or dutch oven. Sauté until soft & fragrant. Next add in garlic, Italian seasoning, basil, oregano, salt, & pepper. Sauté.
Then add the chicken broth, diced tomatoes, frozen corn, and frozen peas. Bring to a boil and boil for 10 minutes.
Reduce the heat to a simmer, add the gnocchi, and let cook for about 5 minutes or until fully cooked through. Add salt & pepper to taste. Enjoy!
