Skillet Ingredients

Ground Beef Brown Rice Onion & Garlic Bell Pepper Corn & Black Beans

Salsa Mexican Cheese Taco Seasoning Olive Oil Salt & Pepper


Chop the bell peppers, mince the fresh garlic, and dice the onion.

Next add olive oil to a large skillet over medium high heat. Once the skillet is hot, add in the ground beef. Brown the beef and season with salt and black pepper. Remove from the skillet and set aside.

To the same skillet add the diced onion and bell peppers. Sauté for about 5 minutes.  Next add in the minced garlic, taco seasoning mix, and salsa. Turn the heat down to medium low. Combine and simmer for another 2-3 minutes.

Then add in the remaining ingredients –  brown rice, cooked beef, corn, and black beans. Combine thoroughly.

Flatten out the mixture in the skillet and top with the shredded Mexican style shredded cheese. Bake for 10-15 minutes, or until the cheese is melted to your liking.

Serve and enjoy! I like to top mine with sour cream, fresh cilantro, lime wedges, and avocado.
