First wash and peel the large carrots.

Next trim off the ends and cut each carrot in half lengthwise.

Finely mince the fresh garlic cloves.

Then add the light brown sugar, maple syrup, and fresh thyme to a small bowl. Add salt and pepper.  Combine evenly.

Pour the maple mixture over the carrots in the baking dish.  Toss to combine thoroughly.

Next slice the butter into thin slices.  Place the thin slices on top of the carrots.  Add extra fresh thyme sprigs too.

Roast, tossing one or two times throughout. Remove the carrots from the oven.  Toss one last time and add salt and pepper to taste.  Serve and enjoy!
