Start by preparing the vegetables.  Chop the bell pepper, mince the garlic cloves, and dice the onion.

Boil the brown rice according to the package instructions.  Next drain & rinse the black beans.

Add olive oil to a pan on the stove over medium heat.  Sauté the pepper, onion, and garlic until soft.  Next add the ground beef and season with salt, pepper, and garlic powder.

Once the beef has browned add the taco seasoning, fire roasted diced tomatoes, and black beans.  Let simmer.

Combine ingredients & add some flavor...

Add the cooked rice to the bottom of a large baking dish.  Add the beef & veggie mixture on top.  Sprinkle with cheddar cheese.  Bake!
