Finely chop the onion, mince the garlic, and halve the bell peppers. Remove the seeds from the pepper as well.

Place the peppers in a baking dish with the open side up. Spray or drizzle with some olive oil. Bake for 5 minutes.

Sauté the onion in a large pan on medium heat with the olive oil, garlic powder, chili powder, salt, and black pepper until soft and fragrant.

Add in the ground beef and cook completely. Season with salt and black pepper. Next add the diced tomatoes, black beans, corn, and brown rice, to the ground beef.

Next add the taco seasoning and combine the stuffed pepper filling thoroughly.

Add the filling to each of the peppers. I recommend overstuffing a little bit. Cover with foil and bake for 10 minutes.
