Healthy Pasta Primavera is made with penne pasta and is packed with tons of colorful vegetables like broccoli, bell pepper, tomatoes, and squash! It’s finished with a light and lemony butter sauce made with parmesan cheese and real lemon juice. You can enjoy this veggie packed dish on its own, or with some grilled chicken, for the perfect easy weeknight dinner!
Salt & Pepper
Add olive oil, minced garlic, and sliced onion to a large pan. Sauté until soft and fragrant.
Add the zucchini, yellow squash, broccoli, tomatoes, and bell pepper. Add more olive oil and season with Italian seasoning, salt, and pepper.
Sauté until the veggies are just cooked. Then add in the cooked penne pasta.
Turn the heat to low. Add butter, lemon juice, and pasta water to the pot. Stir to combine.
Finish pasta primavera with fresh shredded parmesan cheese, salt, and pepper, Enjoy!
